Our bakery began in the small village of Gamboa, in the jungles outside of Panama City, and was built on a pursuit of craft and our love for feeding those around us.
HÉRON’s cuisine is a celebration of the Earth’s offerings. We aim to protect our land by prioritizing sustainable practices, sourcing locally whenever possible.
We believe that access to food is a fundamental right and that its role in society is to invite conversation. HÉRON is honored to be a purveyor of these principles.

We are now a unique, jungle-raised bakery, committed to an exceptional craft where high standards define our products. Every bite you take is a taste of that journey.

We made our start baking for our community out of our little garage in the village of Gamboa. Since then we've grown quite a bit and ventured into the city, but this principle remains the same - our love for feeding those around us.
